Aged Pineapple Daquiri

This is a great cocktail for our warmer fall days, where we don’t want to let go of summer spirits like rum. In this case the pineapple rum is more rich and spicy, as compared to a fruity summer daquiri recipe. The cocoa bitters add depth and darkness – not to be confused with a chocolatey drink.

Ingredients:

  • Plantation Pineapple Rum – 2 Ounces
  • Cane Simple Syrup – ¾ Ounce
  • Fresh lime juice – ½ Ounce
  • Cocoa Bitters – 2 Dashes

Procedure:

Chill a martini or coupe glass with ice water.

In a pint glass, fill with ice and all ingredients. Using a bar spoon, stir thoroughly before straining into the glass. We won’t shake this one to ensure that it stays crystal clear in the glass.

Notes:

For the cane simple syrup, combine equal parts hot water with dark raw sugar. Dissolve fully and then keep in the refrigerator for future use. For the chocolate bitters, “Fee Brothers” and “The Bitter Truth” are great choices to experiment with before exploring the option of making your own.
